Canadian is pretty common lingo in restaurants to talk about black customers. I've heard it in every restaurant I've worked at. It's a pretty gross practice.
Regardless of the overt racism, there is an assumption that Canadian does not equal black (therefore it works as a replacement). What about Canadians who are also... black?

It's just such a strange replacement noun -- all the Canadians I know are good tippers ;)
